The Illahe Bon Sauvage doesn’t need a ton of explanation-- it’s a Willamette Valley Pinot Noir that drinks slightly in the style of Burgundy. It’s made with intention and minimal intervention, just like all the wines from Illahe. So why am I highlighting this bottle? This one is personal. I got my start in the wine world by discovering Willamette Valley Pinot Noirs with my dad and, at my very first wine job, I fell so in love with Illahe that my co-workers joked that I would have nothing to sell if the Illahe was out of stock. This is just a damn good wine.
